BAKED. Bali: the bakery worth arriving early for

There are cafés in Bali where bread feels like an accessory to breakfast.

At BAKED. Bali, bread is the reason the rest of the menu exists.

What began as a bakery in Bali has grown into one of the island’s most recognisable café brands, with locations across Berawa, Batu Bolong, Pererenan, Seminyak and Uluwatu, as well as its own roastery in Padonan.

The spaces vary, but the identity remains consistent: warm sourdough, laminated pastries, carefully sourced Indonesian coffee and polished all-day breakfasts served inside clean, contemporary dining rooms.

Everything feels minimal without becoming austere.

Pastries line the counter.

Fresh loaves wait on shelves.

Coffee moves continuously from the machine.

Tables fill quickly with the particular Bali mix of surfers, travellers, local regulars and people who opened a laptop intending to answer one email.

BAKED. is stylish enough to attract attention, but the appeal is not complicated.

The bread is genuinely good.

The BAKED. philosophy: local sourcing, less waste

BAKED. places a strong emphasis on craft, sourcing and reducing waste.

The bakery says more than 80% of its ingredients are sourced locally, supporting Indonesian farmers and producers while reducing the distance food travels before reaching the table.

It uses real butter and olive oil, avoids palm oil and artificial ingredients, and packages takeaway products in PEFC-certified materials where possible.

The bakery also finds uses for ingredients that might otherwise be discarded.

Leftover sourdough becomes soft-serve ice cream.

Croissant trimmings are turned into sticky buns.

Unsold bread and pastries are donated rather than automatically thrown away.

None of this would matter if the food were not enjoyable.

Fortunately, sustainability is not used as a substitute for flavour here.

The pastries are properly laminated, the sourdough has depth and the menu understands that breakfast can be thoughtful without becoming overly serious.

Start at the BAKED. pastry counter

Even if you plan to sit down for breakfast, look at the pastry counter first.

The selection changes, but core options generally include butter croissants, pain au chocolat, almond croissants, kouign-amann, pastel de nata, cardamom buns, morning scrolls and seasonal fruit pastries.

The butter croissant, currently Rp30,000++, is the simplest way to judge the bakery.

It should arrive with a crisp, deeply golden exterior and a soft, honeycombed centre that pulls apart without becoming dense or oily.

The almond croissant, currently Rp45,000++, is richer and better suited to sharing if a full breakfast is still coming.

For something sweeter, choose the kouign-amann or one of the seasonal fruit pastries.

BAKED. also produces savoury pastries, including combinations such as pastrami and jalapeño, kimchi and cheese, and a substantial meat pie.

The most popular pastries can sell out.

If you are visiting with one particular item in mind, arrive in the morning rather than assuming the full counter will still be available later.

The bread: sourdough and slow fermentation

The bread selection is built around slow, natural fermentation.

Current loaves include rye, multigrain, whole-wheat and oat sourdough, alongside baguettes, ciabatta, pretzels, simit, bagels and black-sesame brioche.

Whole sourdough loaves are generally priced between Rp55,000 and Rp60,000++, with half loaves also available.

The crust is substantial, the crumb carries a gentle tang and the bread has enough structure to support BAKED.’s generous egg dishes without disappearing beneath them.

If you are staying in a villa, buy a loaf on the way out.

A good sourdough, butter, fruit and coffee can solve breakfast for the following morning without another trip through Bali traffic.

The Original Best Scramble

The signature breakfast is called The Original Best Scramble.

It is a confident name.

Fortunately, the dish understands why people keep ordering it.

Soft scrambled eggs are served over BAKED. sourdough with brown butter, crème fraîche, roe and chives.

Currently priced at Rp85,000++, it is rich, savoury and elevated just enough to feel more considered than scrambled eggs on toast without losing the comfort of the original idea.

The crème fraîche brings acidity.

The brown butter adds nuttiness.

The roe provides small bursts of salinity across the eggs.

Cold-smoked salmon, Toulouse sausage or bacon can be added for an additional charge, but the dish does not necessarily need them.

Order it as it comes on your first visit.

Add the salmon only if breakfast needs to become lunch as well.

If you prefer poached eggs: the BAKED. Benny

BAKED.’s Benny, currently Rp90,000++, places bacon, wilted kale and poached eggs over sourdough with gochujang hollandaise.

The gochujang brings enough heat and fermentation to distinguish it from every other eggs Benedict served across Bali’s brunch cafés.

It is richer than the scramble and better suited to a slow breakfast rather than something you order immediately before the beach.

The avocado toast is another reliable option, combining mashed organic avocado, cherry tomatoes, poached eggs, feta, greens, lemon and roasted sesame.

For something more substantial, Yalla layers roasted-garlic labneh, poached eggs, merguez sausage, brown-butter za’atar, tomato, harissa oil and pickled onions over simit.

That is the order for anyone who normally finds café breakfasts too restrained.

The breakfast sandwich: Egg Sesame Brioche

The Egg Sesame Brioche, currently Rp80,000++, is BAKED.’s answer to the breakfast sandwich.

A glossy brioche bun holds folded eggs, bacon, brown sauce and watercress.

It is rich, compact and easier to eat than most dishes involving eggs before 9am.

This is the order when you want breakfast without committing to a full plate.

There are also bagels, sandwiches and toast-based dishes available throughout the day, including a smoked-salmon lox bagel, an egg-and-avocado sandwich and the Royal Rooster with roasted chicken, tarragon sauce, avocado and watercress.

The Lox, currently Rp125,000++, is one of the more expensive options, combining a bagel with cream cheese, cold-smoked salmon, capers, red onion, cornichons and dill.

It is not revolutionary.

It is simply a very good version of something you already wanted.

What to order if you want something sweet

The sweet breakfast menu is concise but dangerous.

BAKED.’s sourdough pancakes, currently Rp90,000++, are served with butter, bacon and maple syrup.

They are fluffy without losing the slight tang that makes sourdough batter more interesting than a standard pancake mix.

Then there is the Korean Honey Toast.

Thick honey-butter toast is served with honeycomb, sourdough ice cream, sourdough crumble and elderflower.

Currently Rp85,000++, it sits somewhere between breakfast and dessert.

The toast is crisp and caramelised at the edges, soft in the centre and built to absorb the melting ice cream.

Order it for the table rather than pretending it is a balanced individual breakfast.

For something lighter, choose the cardamom granola with vanilla labneh, strawberries and rose petals or the morning porridge with caramelised banana jam, sweet tahini and roasted sesame.

The sourdough ice cream

BAKED.’s most interesting waste-reduction idea may also be one of its best menu items.

Leftover sourdough is transformed into a tangy, creamy soft-serve ice cream, available with sourdough crumble or as an affogato.

The flavour is difficult to describe without making it sound more unusual than it is.

It is creamy and lightly fermented, with the gentle savouriness of bread sitting beneath the sweetness.

The soft serve with crumble is currently Rp45,000++, while the affogato is Rp48,000++.

It makes sense after breakfast.

It also makes sense at 3pm when you walked in intending to buy only a coffee.

The coffee and the Padonan roastery

BAKED. takes coffee as seriously as the bakery.

Its Padonan roastery works with specialty-grade, 100% Arabica Indonesian beans, highlighting growing regions such as Kintamani and Toraja.

Espresso drinks are clean and consistent, with hot lattes, flat whites and cappuccinos generally beginning around Rp40,000++.

Oat and cashew milk alternatives are currently available at no additional cost.

There are also V60 and batch-brew options for anyone more interested in the coffee itself than the milk surrounding it.

For something cold, try the Pims, a 24-hour cold brew with brown sugar, cream and fresh nutmeg, or the Palm Grove Latte sweetened with organic palm sugar.

BAKED. also cans its own ready-to-drink coffee, including cold brew, latte, oat latte and palm-sugar latte, which can be useful for villas, road trips or early departures.

Is BAKED. good for working?

It depends on the location and the time.

Many BAKED. venues have air conditioning, comfortable tables and reliable coffee, making them appealing for a laptop session.

They are also busy cafés with high table turnover.

A laptop makes sense during a quieter weekday period when tables are available.

Holding a large table throughout the peak breakfast rush while drinking one coffee does not.

For the easiest experience, eat breakfast first, order a second drink and work only if the room is not waiting for your seat.

The Padonan roastery or larger locations may be better suited to lingering than the busiest dining rooms in central Canggu.

Which BAKED. Bali location should you visit?

BAKED. currently has several Bali locations, including Berawa, Batu Bolong, Pererenan, Seminyak and Uluwatu.

The core menu and bakery identity carry across the brand, but the experience changes slightly depending on where you go.

Choose Berawa or Batu Bolong if you are staying around Canggu and want the lively café atmosphere associated with the original BAKED. experience.

Choose Pererenan for a slightly slower neighbourhood breakfast.

The Seminyak Village location is particularly convenient if you are shopping or staying around central Seminyak. It also trades later than the predominantly daytime branches, currently opening from 7am until 10pm.

Choose Uluwatu if you want a reliable bakery breakfast before heading to the beaches or exploring the Bukit Peninsula.

Whichever location you select, check its current hours and addresses before travelling, as trading times vary between branches.

How much does BAKED. Bali cost?

BAKED. sits within Bali’s mid-range-to-premium café category.

Pastries generally begin around Rp27,000–Rp50,000++, while most plated breakfasts cost approximately Rp75,000–Rp125,000++.

Coffee generally sits between Rp28,000 and Rp75,000++, depending on the style and size.

For a plated breakfast with coffee, allow approximately Rp130,000–Rp220,000 per person, before tax and service.

Add pastries, juice or sourdough ice cream and the total can move closer to Rp250,000–Rp300,000 per person.

Menu prices are listed in thousands of Indonesian rupiah and exclude applicable tax and service charges.

Do you need a reservation at BAKED.?

BAKED. operates primarily as a walk-in bakery and café.

For most visits, you do not need a reservation.

What you may need is patience.

Popular locations can develop queues during peak breakfast and brunch periods, particularly on weekends and through the busiest parts of Canggu.

Arrive before 8.30am if you want the widest pastry selection and the best chance of sitting immediately.

If you arrive between 9.30am and midday, be prepared to wait or take coffee and pastries away.

Turnover is usually reasonable, but this is not the café to visit 45 minutes before a tour, flight or spa booking.

When to visit BAKED. in Canggu

Morning is the obvious answer.

Arrive early enough to see the pastry counter at its best, order coffee before the room fills and take bread home while the selection is still complete.

A weekday between 7am and 9am is ideal.

For the sourdough ice cream or an afternoon pastry, visit after the lunch rush.

The Seminyak Village branch is useful later in the day because it currently remains open into the evening, while many of the other Bali locations are more focused on breakfast and daytime trade.

The Boarding for Dinner verdict

GO EARLY — AND ORDER MORE THAN COFFEE.

BAKED. is not Bali’s cheapest breakfast and it is no longer an undiscovered neighbourhood bakery.

It is busy, polished and very aware of its own aesthetic.

But beneath the branding is serious bread, properly made pastries, thoughtful coffee and a breakfast menu that understands how to let the bakery remain central.

Order the scramble.

Add a butter croissant.

Buy a loaf for tomorrow.

Then return for the sourdough ice cream you initially decided was unnecessary.
